Pancake day: The Ultimate Guide

Pancake Day, or shrove Tuesday, is the day before the first day of lent. During lent you’re traditionally supposed to fast or cut out some element of your life. Pancake day is used as an ‘empty your cupboard’ day, therefore it’s fantastic for those of us looking to reduce our food waste.

I’ve put some ideas of fillings at the bottom of the page, however get creative and see what you have in your fridge or cupboards. In conclusion, pretty much anything goes with pancakes.

While foods like chocolate, crisps or alcohol are common to give up for lent, I’ll suggest something else: Why not try giving up food waste? Love Food Hate Waste has a fantastic campaign on that you can still join, which encourages people to reduce their food waste. I wanted to collect a selection of recipes for a variety of pancakes, to ensure you find the right one for Pancake Day. There’s everything from crepes to gluten free and some suggestions of what to put on them, sweet or savoury. If you’re not a big fan of pancakes, but still looking for something sweet, then try the apple crumble or apple crisps.

70g plain flour
2 eggs
100 ml milk
Butter for frying

Mix the eggs and the flour together to form a smooth batter and slowly mix in the milk until you get a runny and smooth consistency. Ladle into a frying pan and swirl around till you get a thin pancake. Fry in butter for about 30 seconds each side.

 

American pancakes brunch pancakes pandekager

American Pancakes (makes 12):

150g plain flour
1 egg
Pinch of salt
2 tbsp. vegetable oil (not olive oil)
250 ml milk
1 tsp. baking powder
Butter or oil for frying

Mix the flour, egg, salt, and oil in a bowl. Add 100ml of milk. Whisk till it forms a smooth batter. Slowly add in the remaining milk till you get a smooth consistency. Add the baking powder at the end and combine with the rest of the ingredients. Heat some oil/butter in a pan and add two tablespoons of batter on top of each other to make 1 pancake. Turn over when bubbles start to appear on top. Fry until golden brown.
